Macerated Greens with Lemon-mustard Vinaigrette
Servings: 2-4
Salad Ingredients:
- 1 pound kale, or other hearty greens, rough chopped
- 1 tablespoon lemon juice
- 1 teaspoon kosher salt (Diamond brand)
Vinaigrette Ingredients:
- 3 cups extra virgin olive oil
- 1 tablespoon good-quality red wine vinegar
- 1/2 cup lemon juice
- 1 teaspoon kosher salt (Diamond brand)
- 2 tablespoon maple syrup
Garnish:
- Mix of fresh herbs (cilantro, dill, flat-leaf parsley, nasturtium, etc.)
- Toasted seeds
- Thinly shaved radishes
Instructions:
For the salad, massage the salt and lemon juice into the greens.
To make the vinaigrette, place all the ingredients in the Vitamix. Blend for 30 seconds. Store in a mason jar in the fridge.
To serve the salad, drizzle the vinaigrette over the macerated greens. Garnish the salad with toasted seeds, radish and herbs.
